RAW SNOWFLAKE SLICES

RAW SNOWFLAKE SLICES 

SERVES | 4-6 people

INGREDIENTS:

BASE - 

  • 1 cup of almonds
  • 1 cup of shredded coconut
  • 1 1/2 cup of oat flour (or blended oats!)
  • 3 tbsp. of maple syrup
  • 1 tbsp. of melted coconut oil 

WHITE  LAYER - 

  • 1 cup of soaked cashews
  • 1/3 can of coconut milk
  • ¼ cup maple syrup
  • ½ cup shredded coconut
  • 1 tbsp. of melted coconut oil
  • ½ cup of lemon juice 


BLUE LAYER - 

  • 1 tsp. of Blue Spirulina 💙 
  • 1 cup of soaked cashews
  • 1/3 can of coconut milk
  • 1 1/2 cups of lemon juice
  • 1tbsp. of melted coconut oil
  • ¼ cup of maple syrup 

METHOD:

  1. Add the almonds to your blender for the base layer and quickly blend until they form a powder. Then add the remaining ingredients for the base layer and blend until a sticky/dough texture is formed. 
  2. Scrape the mixture into a greased baking tin (with grease proof paper) and spread out evenly. Then pop into the freezer.
  3. Add the ingredients for the White Layer to your blender and blend until smooth. Then pour over the top of your base layer and put back into the freezer. 
  4. Add the ingredients for the the Blue Layer to your blender and blend until smooth.  Then pour the remaining mix over the top and spread evenly. 
  5. Pop back in the freezer for at least 3 hours before cutting into squares and tucking in!
