PUMPKIN SPICED PROTEIN PANCAKES 🎃

This Halloween inspired recipe has got us feeling all autumnal! Colder nights, dark mornings, pumpkin spiced pretty much everything - we've created the perfect healthy treat for you to enjoy completely guilt-free. Oh and it includes our Muscle Protein blend, so perfect to have after an early morning run 💪🏻

MUSCLE PROTEIN PUMPKIN SPICED PANCAKES

SERVES | 1

INGREDIENTS: 

Dry Ingredients

  • 1 tbsp Muscle Protein 
  • 1 cup of buckwheat flour
  • 2 tsp of gluten free baking powder 
  • 1 tbsp of coconut sugar
  • 1/2 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon 

Wet Ingredients

  • 1 1/2 cup of nut milk
  • 1/2 can of pumpkin puree
  • 1 tbsp of apple cider vinegar 

 

 METHOD: 
  1. Mix together the dry ingredients in a separate bowl to the wet ingredients.
  2. Fold the dry & wet mixture together.
  3. Heat your frying pan to a medium heat and add a spoonful of coconut oil. 
  4. Pour some of the mixture into the pan and cook until both sides are golden and fluffy. 
  5. Then top with coconut yoghurt, dark chocolate and maple syrup! Enjoy 🥞🎃
