Protein pancakes are a great way to start the day whether you've finished a tough morning workout or just fancy treating yourself to something a bit more substantial after a long lie-in at the weekend! These pancakes are gluten-free, packed with plant-based protein and - most importantly - incredibly delicious!
What are protein pancakes? 🥞
As the name suggests, protein pancakes are pancakes with added protein! They are most often fluffy American-style pancakes which have a small amount of protein powder added to the mixture before cooking.

What are chia seeds and where can I find them? 🌱
Chia seeds are a superfood seed which is incredibly nutrient dense, containing a good dose of fibre, vitamins, minerals and healthy fats in a very small package!
They're easily added to smoothies, breakfasts and healthy recipes for an extra nutrient boost. Chia seeds also have a great texture and soak up any liquid they're left in to create a tapioca-like consistency. So, they're ideal for healthy dessert recipes too.
Chia seeds can be found in most supermarkets these days or you can grab some online very easily.
What is buckwheat flour? 🌾
Buckwheat flour is made using 100% wholegrain buckwheat. It has a deep, earthy flavour and is a bit more dense than regular flour. Buckwheat is naturally gluten-free, so its flour is ideal for replacing regular flour in gluten-free recipes.
MUSCLE PROTEIN PANCAKES WITH BANANA & CHIA SEEDS RECIPE
- 3 heaped tbsp Muscle Protein powder (~33g)
- 300ml plant-based milk
- 60g buckwheat flour
- 1 medium ripe banana
- 5g chia seeds
- 1 tsp baking powder
- Fresh berries
- Nut butter
- Maple or agave syrup
- Add the banana, plant-based milk and chia seeds to a blender and blend on high-speed until smooth
- Next, add the buckwheat flour, Muscle Protein powder and baking powder to the blender, reduce the speed to low and blend once more until smooth
- Place a non-stick frying pan on a medium heat and add a ladleful of mixture for each pancake, cooking for around 2 minutes on each side until golden and cooked through
- Serve with fresh berries, nut butter and a drizzle of maple or agave syrup
Tip: As this recipe uses a gluten-free flour, your pancakes will be a little more fragile - so take care when flipping to keep them intact!
